This Week's Kitchen
Every week we pick a handful of what's coming out of the ground in biggest supply and build a few simple meals around it to help you with your meal planning. This week we're going all in on one vegetable — sugarloaf cabbage — charred into smoky wedges, stir-fried with ginger and noodles, and folded warm into a salad with apple and haloumi. Here's what we're cooking with it.
1. Charred Sugarloaf Wedges with Miso-Lemon Butter
A showstopper side — seared hard then roasted, so it chars without turning bitter.

Ingredients
- 1 sugarloaf cabbage, cut into 6 wedges through the core
- 3 tbsp olive oil
- Salt
- 60g butter, softened
- 1 tbsp white miso
- 1 clove garlic, grated
- Zest and juice of 1 lemon
- Pinch chilli flakes
- 2 tbsp toasted flaked almonds
Method
- Heat oven to 220°C. Brush cabbage wedges all over with olive oil and season with salt.
- Sear wedges cut-side down in a hot ovenproof pan, 3-4 minutes, until deeply charred.
- Transfer pan to the oven, roast 12-15 minutes until the core is tender.
- Meanwhile mash butter, miso, garlic, lemon zest and juice into a paste. Dollop warm miso-lemon butter over the hot wedges, scatter with chilli flakes and almonds, and serve.

- Vegan — swap the butter for a miso-tahini dressing and skip the almonds for toasted seeds.
- Vegetarian — serve alongside soft-boiled eggs.

2. Ginger-Garlic Sugarloaf & Noodle Stir-Fry
A quick weeknight stir-fry — sugarloaf's thin leaves cook in minutes and stay sweet, not bitter.

Ingredients
- 1/2 sugarloaf cabbage, roughly shredded
- 250g noodles of choice
- 2 tbsp neutral oil
- 3cm ginger, julienned
- 3 cloves garlic, sliced
- 2 spring onions, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (or hoisin)
- 1 tsp sesame oil
- Sesame seeds, to finish
Method
- Cook noodles according to packet, drain and set aside.
- Heat oil in a wok until smoking. Add ginger and garlic, stir-fry 30 seconds until fragrant.
- Add cabbage and stir-fry on high heat 2-3 minutes — it should stay bright and just wilted, not soft.
- Add noodles, soy sauce and oyster sauce, toss to combine and heat through. Finish with sesame oil, spring onions and sesame seeds.

- Vegetarian — a fried egg on top turns this into dinner in one step.

3. Warm Sugarloaf, Apple & Haloumi Salad with Walnuts
Ribbons of sugarloaf, barely wilted, with crisp apple and salty haloumi.

Ingredients
- 1/2 sugarloaf cabbage, sliced into ribbons
- 1 apple, thinly sliced
- 180g haloumi, sliced
- 2 tbsp walnuts, roughly chopped
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp dijon mustard
- 1 tsp honey
- Salt and pepper
Method
- Whisk olive oil, vinegar, mustard and honey into a dressing; season.
- Fry haloumi slices in a dry pan 1-2 minutes per side until golden.
- In the same warm pan, off the heat, toss the cabbage ribbons briefly just to take the raw edge off and lightly wilt them.
- Pile onto a platter with apple slices, top with haloumi and walnuts, and drizzle with dressing.

- Vegan — swap haloumi for pan-fried marinated tempeh.
